Easy Salmon Cucumber Salad Recipe – Healthy Mediterranean Lunch

Ingredients:
2 salmon filets
1 English cucumber
Salt and pepper
2 tbsp half fat cream fraiche
1 tbsp dill

Direction: Prep the cucumber by halving and scooping out the seeds. Slice into half moons and lay out on a paper towel. Top with a bit of salt and allow to drain. Steam the salmon for about 6 minutes. Flake salmon with a fork. Combine salmon and cucumber into a medium bowl. Add in cream fraiche and dill and combine. Taste and add salt or pepper if needed. You can add this to top of a salad or with a slice of warm sourdough. Enjoy!
