
October is BUSY yall!
These spooky Halloween themed quesadillas are exactly what you reach for this week when you want to have a little fun at your meal without too much effort!
I did make these tortillas from scratch as they taste soo much better but you can buy store bought too.
Then I just used Halloween cookie cutters to cut shapes and made quesadillas!
My boys loved these and it was a fun thing to do after a Halloween filled weekend!
Homemade Tortillas:
3 cups AP flour
1 tsp kosher salt
1 tsp baking powder
1/3rd cup olive oil
1 cup warm water
Directions: in a mixer with a dough arm, combine flour salt and baking powder and mix on low to combine. Add oil and warm water and mix until dough forms. In a floured surface, divide the dough into 16 balls for individual tortillas or roll out one big very thin sheet and cut shapes with cookie cutters. Cook on the stove top until browned. Enjoy!
