
Some of you may know my obsession with mini muffins right now 😅 I just find them so cute!
I love using my left over bananas for banana bread but this morning we made muffins!
These do not use cane sugar, they are sweetened with bananas and a little bit of maple syrup!
The whole wheat flour provides some fiber and B vitamins vs AP flour making them a more nutritious choice!
There’s also just nothing better than homemade food let’s be honest!
I did not have walnuts this morning but could see adding chopped walnuts would be tasty and adding in some healthy fats.
My kids love adding chocolate chips as well the mini chocolate chips work great with the mini muffins.
If you’re looking for a mini muffin tin here’s mine.
Ingredients:
1 3/4 cup whole wheat flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/3rd cup oil (I used olive oil)
1/2 cup maple syrup
1/4 cup milk
2 eggs
2 large bananas, ripened
Optional chopped walnuts or chocolate chips
Directions: Preheat oven to 400F. In a medium bowl mix dry ingredients whole wheat flour, baking soda, cinnamon, and salt. In a separate bowl, mix wet ingredients oil, syrup, milk, eggs, and bananas. Add the dry ingredients to the wet and combine. Mix in optional add ins as needed. Divide into the mini muffin tins. Bake for about 15 minutes until cooked through. This recipe made me 1 1/2 pans of mini muffins. Enjoy!
