Southwest Stuffed Bell Peppers with Ground Turkey and Quinoa

Serves about 4 servings 

Ingredients:

1 lb ground turkey

1/2 yellow onion, diced

3 garlic cloves, minced

1 cup cooked quinoa

1 cup black beans, drained 

4 multicolored bell peppers, halved and core removed

1 red bell pepper, diced

1 tbsp olive oil 

Salt and pepper as needed

1 tsp smoked paprika

1/2 tsp ground cumin 

Dash of chili powder per preference 

Directions: Preheat oven to 400F. Cut the 4 multicolored bell peppers in halve and remove stem and seeds. On a baking sheet, bake the bell peppers for about 15-20 minutes until softened. Set aside. While the bell peppers bake, In a pan over medium heat add in olive oil, onion, and garlic and cook for about 3 minutes until garlic is fragrant, add in the chopped red bell pepper and cook mixture about 3-5 minutes. Add in ground turkey and cook until fully cooked through (internal temp is 165F). Add in quinoa, black beans, and seasoning and combine. Let flavors meld for a few minutes on low heat. Add turkey mixture into the bell peppers and enjoy!
