

Low effort, one pan meal in 30 minutes!
Add this Mediterranean Ground Chicken and Veggies to your next meal prep, and I am telling you it will become a staple!
This dish is not only super flavorful but it is packed with protein and veggies, making it perfect for building a well balanced plate.
We paired this with baked sweet potato which was so tasty!

Ingredients:
1 lb ground chicken
Olive oil
3 garlic cloves, minced
1 small red onion, 1 inch slices
1-2 zucchini, halved and sliced
1 red bell pepper, sliced into 1 inch slices
1 pint cherry tomatoes, halved
1/2 cup halved Kalamata olives
1/2 tsp salt
1/2 tsp black pepper
1 tsp cumin
1 tsp smoked paprika
1 tsp oregano
1/2 tsp garlic powder
Feta cheese for crumbling over top
Parsley, chopped for garlic optional
Directions: In a large sauté pan over medium heat, add some olive oil and garlic, cook until fragrant about 3 minutes. Add in onions, zucchini, and bell peppers. Cook until veggies start to soften about 10 minutes. Add in the cherry tomatoes and cook for another 5-10 minutes until all veggies cooked through. Pour cooked veggies in a container and set aside. In the same pan, add a bit more oil over medium heat, cook the ground chicken until cooked through. Add back the veggie mixture and the olives. Add In the salt, pepper, cumin, paprika, oregano, and garlic powder and combine all flavors. Remove from heat and sprinkle feta cheese and parsley over top. Enjoy!
