

White Bean and Turkey Chili! Amazing for meal prep too!!
I love a good crockpot meal and chili is a classic food that is so versatile.
One of the number one nutrition tips I talk about with my patients is reducing red meats when they’re able.
It can be soo hard to change classic recipes like chili from ground beef to turkey in fear of a big flavor change but I promise we end up craving what we’re used to and this chili is soo tasty!
This version is “healthier” as it swaps red meat for lower saturated fat in ground turkey still making it a high protein filling dish.
This chili is also packed with fiber with the white beans and is so flavorful!
It makes soo much food too which is amazing for left overs too.

Ingredients:
Olive oil
1 lbs 99% lean ground turkey
1 small onion, chopped
3 garlic cloves, minced
1 teaspoon chili powder
2 bay leaves
1 1/2 tbsp cumin
1 tsp Italian herbs
2 15 oz cans white northern or navy beans, rinsed and drained
15 oz can pumpkin puree
4.5 oz can chopped green chile
2 cups low sodium chicken broth
salt and pepper to taste
Optional toppings: chopped cilantro, red onion or chives, Greek yogurt or low-fat sour cream
Directions: In a pan over medium heat, heat olive oil. Cook ground turkey until cooked through. In a crockpot, combine all ingredients (aside from toppings) and cover. Cook for 8 hrs on low.
