Lentil Salad with Creamy Peanut Dressing

Ingredients:

½ cup lentils, cooked

½ cup quinoa, cooked

1 red bell pepper, diced

1 cup kale, softened

2 tbsp non-fat greek yogurt

1 tbsp peanut dressing

Directions: In a bowl mix together lentils, quinoa, red bell pepper, and kale. In a small bowl mix the Greek yogurt and peanut dressing, can thin out with some water as needed. Pour dressing overtop.
