
Ingredients:
1 medium eggplant
1 tbsp olive oil
3 oz ground turkey, cooked
½ white onion, diced
1 cup tomatoes, diced
Directions: Preheat oven to 400F. Cut the eggplant in half, and hallow out the middle and cook eggplant until softened about 15-20 minutes. In a medium sauce pan, heat ½ of the olive oil and add in the onions. Cooke for about 3-5 minutes until starting to soften. Add in ground turkey and cook for about 5-8 minutes. When turkey is starting to brown, add in the tomatoes and cook down. Season as needed and place mixture into the eggplant halves.
