Summer Mediterranean Veggie Orzo

Y’all I promise you need this recipe for your next spring or summer event! You can prep this ahead of time and serve it cold or prep all the veggies and toss with the warm orzo right before serving making it such a. Easy grab and go!

I am getting serious about how nice the weather has been and this orzo salad has really got me ready to have dinner outside either at a picnic or just in the backyard!

We paired this with Greek Turkey Meatballs (recipe to come) but would also be amazing with some lemon chicken or fish from the grill!

Ingredients:
1 cup orzo pasta, uncooked (cook per package instructions)
1/2 red onion diced
3 garlic cloves, minced
1 red bell pepper, diced
1 cucumber, diced
1 pint cherry tomatoes, quarter

1/4 cup feta cheese
3 Tbsp fresh basil
3 Tbsp fresh parsley
2 Tbsp olive oil
1/2 lemon juiced
1/2 tsp salt
Pinch black pepper
1 Tbsp honey

Directions: Cook orzo according to package and drain. Chop and prep all veggies into a bowl. Add cooked orzo over top. Drizzle with olive oil. Lemon juice and salt and pepper. Enjoy!
