
These Greek inspired turkey meatballs are perfect for meal prep for a variety of dishes!
We ate these over top Mediterranean Orzo dish I shared 2 reels back and topped with Tatziki sauce and tbh it’s so worth it!
I love all these flavors with the fresh herbs and veggies and the creamy tatziki with savory turkey meatballs I could eat this weekly!
It would also be so good in pita pockets with some lettuce and tomatoes for lunches!
It is also something you can prep ahead of time and have it ready for dinner!
Ingredients:
1 lb lean ground turkey
1 egg
½ cup breadcrumbs
¼ cup red onion, diced
4 garlic cloves, minced
1 small zucchini, diced
3 Tbsp fresh parsley, chopped
3 Tbsp fresh mint, chopped
½ tsp dried oregano
1/3 tsp salt
black pepper
*tatziki sauce optional
Directions: Preheat oven to 400F. combine all ingredients (aside from tatziki sauce) into one bowl and mix thoroughly. Form into golf ball size meatballs and cook in the oven for about 15-20 minutes until internal temp is 165F.
