Crockpot Flavorful Mediterranean Chicken

Send this to someone who needs an easy crockpot meal this winter!

One of my friends asked me about crockpot meals this week so I had to go on the hunt as I also love a good crockpot meal, especially when I work late days.

This dish was exactly what I was hoping for! I adapted a few recipes I saw to make sure it packed the Mediterranean flavors.

We served this over cous cous (though any whole grain over even beans could be nice too)!

We used chicken as the main protein here but if you wanted a #vegan option would could omit the chicken and use vegetable broth and serve over whole grain rice or pasta or some cannellini beans 😍

Ingredients:
2 boneless skinless chicken breast
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried rosemary
1/2 tsp salt (+ more to taste as needed)
1/8 tsp black pepper
1 bay leaf
1 yellow onion, halved and sliced
6 garlic cloves, minced
1 cup roasted red peppers
1-28oz can whole pealed tomatoes, quartered
1 cup olives, drained
1 cup capers, drained
1 cup artichokes, drained shredded or quartered
4 oz white wine
2 oz chicken stock
1/2 lemon, juiced (+ more for serving)
1/2 cup parsley for serving

Directions: Place all the ingredients into a crockpot and place on low. Cook for about 6 hrs until cooked through. Enjoy either on its own or over top a starch.
