Vegan Lemon Poppyseed Muffins Made with Oat Flour

Been wanting to try this recipe out for a while and happen to have the ingredients in my pantry during our quick Nashville snow yesterday ❄️

These muffins were surprisingly satisfying with the lemon, oat flour, and hint of sweetness.

My husband also enjoyed them as he loves the lemon flavor!

Tbh using oat flour is amazing to me as you’re getting a high quality whole grain with these muffins 🤍

Ingredients:
2.5 cups oats
3 Tbsp poppy seeds
1 Tbsp baking powder
1 Tsp salt
1 cup mashed banana OR 4oz apple sauce
2/3rd cup maple syrup
1/3rd cup creamy almond butter
2 Tbsp lemon zest
1/4 cup lemon juice
2 Tsp almond extract

Lemon Glaze:
1/2 cup powder sugar
1 Tbsp fresh squeezed lemon juice

Directions: Preheat oven to 375F. In a blender, combine oats, poppyseeds, baking powder, and salt and blend until smooth. In a large bowl whisk together banana (OR apple sauce), maple syrup, almond butter, lemon zest, lemon juice, and almond extract until combined. Add in blended ingredients and mix until well combined. In a greased 12 muffin tin, use a cookie scoop of dough to each muffin. Bake for 22-25 minutes. While muffins cool, mix the lemon glaze together. Drizzle glaze over top. Enjoy!
