The Best Fall Quiche EVER. It made the whole house smell like rosemary and fall 🍂
Quiche is a versatile meal you can add any vegetable to. It is a high protein, meatless meal you could choose if you’re trying to eat less meat.
This one in particular has amazing flavor with the butternut squash, goat cheese, and rosemary. We paired it with an arugula salad and it was a perfect meal 🤌🏻
Ingredients:
2 pie crusts (I used frozen but feel free to make your own!)
6 eggs
1 cup milk (I used 2%)
2 cups roasted butternut squash
1/2 cup green onions, sliced
1 Tbsp fresh rosemary, chopped
4 oz goat cheese crumbles
1/2 tsp salt
1/2 tsp black pepper
Directions: Set frozen pie crust at room temperature for 15 minutes. Preheat oven to 400F. Cook pie crust for 10 minutes. In a large bowl, add 6 eggs and 1 cup milk and whisk. Add in precooked butternut squash, green onions, rosemary, salt and pepper, and goat cheese. Mix to combine. Pour egg mixture evenly between the two pieces crusts. Bake for 40 minutes until slightly browned and center is set. Enjoy!
