Apple and Cheddar Chicken Meatballs with Cider-Sage Sauce

Tender chicken meatballs with sautéed apples and cheddar baked in, topped with apple-cider sage dressing 😍

Ingredients:
1 lb ground chicken
1 egg
1 tbsp olive oil
½ of a yellow onion, diced 
½ of a Granny Smith apple, peeled and diced
1 tsp soy sauce
2 oz cheddar cheese, freshly grated
½ c fine breadcrumbs
¼ cup parsley, chopped
¼ cup walnuts, finely diced
1 1-inch piece of ginger, grated
1 tsp salt
Freshly cracked black pepper and cayenne to taste

Apple Cider-Sage Sauce:
1 bunch sage leaves
1 cup apple cider
3 tbsp AP flour
1 cup chicken stock
Salt and pepper to taste

Directions: Preheat oven to 400F. In a Pan over medium heat, heat up olive oil. Add in diced onions and apple. Cook for about 5-8 minutes until softened. Add the tsp of soy sauce and scrape any bits from the bottom of the pan. Remove from heat to cool. In a large bowl combine the meatball ingredients chicken, egg, onion/apple mixture, cheese, breadcrumbs, parsley, walnuts, ginger, and seasonings. Mix together with hands and form 1-inch meatballs and place on a non-stick baking sheet. Bake for about 15-20 minutes until internal temperature says 165F. While meatballs are cooking make the sauce in the same pan used for the onion apple mixture by heating over medium heat. Add a dash of olive oil and sage leaves, cook until crispy. Add in the apple cider, scraping any bits from the bottom. In a separate bowl, combine chicken stock and AP flour and whisk until combined. Pour mixture slowly into the pan and whisk to combine altogether. Add salt and pepper as needed. And simmer until desired consistency. Can remove sage leaves for serving.
