High Fiber Chickpea Blondies

Okay 5g fiber per serving!!

Tbh I am obsessed with chickpeas right now trying out new ways to use them and this treat was so satisfying and can fit within your day to help with a fiber boost!

I recently purchased psyllium powder and have been testing ways to add it with my foods.

Psyllium powder has many benefits including bowel regularity and prebiotic, can help lower LDL cholesterol (PMID 18287346), improve blood sugar (PMID 19852693), and supports weight management due to its filling ability.

When starting psyllium or any added fiber regimen be sure you are drinking plenty of water with it!

Would you try these Blondies for a fiber and sweet treat??

Ingredients (9 servings)
1 (15 oz) can chickpeas, rinsed and drained
½ cup natural peanut butter (no added sugar or oils)
⅓ cup pure maple syrup (or agave for #vegan)
2 tsp vanilla extract
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 tbsp psyllium husk (adds 4g fiber total)
2 tsp ground flaxseed (adds 1.1g fiber total)
⅓ cup dark chocolate chips (optional, or vegan chocolate chips)

Directions:
Preheat oven to 350F. Line an 8×8 baking dish with parchment paper or lightly grease. In a food processor or high-speed blender, blend chickpeas, peanut butter, maple syrup, vanilla, baking powder, baking soda, and salt until smooth. Stir in psyllium husk and flaxseed. Let batter sit for 5–10 minutes to thicken. Fold in chocolate chips (if using). Spread into baking dish. Bake for 20–25 minutes, or until edges are golden and center is just set. Cool completely before slicing into 9 squares.
