Mediterranean Vegetarian Pasta

Makes about 4-6 portions

Ingredients:

8oz (1/2 package) whole wheat spaghetti, cooked per package

2 large zucchini, spiraled (you can buy frozen if needed)

1 tbsp olive oil

3 cloves garlic, minced

Dash red pepper flakes

1/2 lemon juiced

1 pint cherry tomatoes, halved 

1/2 cup Kalamata olives, drained

1/2 cup sun dried tomatoes, drained and chopped

1 can artichokes, drained 

1 jar capers, drained 

2 tbsp fresh parsley, chopped

Salt as needed

1 tsp garlic powder

1 cup feta cheese, crumbled 

Directions: Cook pasta per package instructions, set aside. In a large sauté pan, heat olive oil. Add a dash of red pepper flakes and garlic and cook until fragrant about 3-5 minutes. Add in spiraled zucchini and cherry tomatoes and cook until softened and some of the water evaporated (You can also drain some water out if needed. Add drizzle of lemon juice. Add in the olives, Sun dried tomatoes, artichokes, capers  and cook through and a bit more liquid evaporated. Add salt and pepper as needed and the garlic powder. Remove from heat and mix in parsley and feta. Enjoy!
