Thai Chicken Lettuce Cups with Chili Lime Sauce

Just a little flavor break for yalls feed!

This dish was soo good we didn’t even have left overs hah so feel free to double it if you want left over! It would be so good overtop a salad as well or with some vinegar cucumbers!

We did pair this with cooked sweet potatoes too to provide high fiber starch balance to the meal.

Ingredients:
1/4th cup Tamari (or soy sauce)
1 Tbsp chili paste (can sub sweet chili paste)
1 lime, juiced
1 tsp maple syrup
1 tbsp sesame oil
1/2 yellow onion, diced
4 garlic cloves, minced
1 tbsp ginger, minced
1 cup shredded carrots
1 lb ground chicken
1/3rd cup cashews, chopped
1/4 cup green onions, sliced
1/4 cup cilantro, chopped
Sesame seeds for topping optional
1 Butter lettuce head

Directions: mix together tamari, chili paste, lime juice, maple syrup and set aside. In a pan on medium heat, heat sesame oil. Add in onion, garlic, ginger and carrots and cook until softened about 5 minutes. Add in the ground chicken and brown. Add in the sauce and continue cooking until everything cooked through. Toss in the cashews and turn off the heat. Arrange the lettuce and add a scoop of the ground chicken, top with green onions, cilantro, and sesame seeds. Enjoy!
