Chopped Mediterranean Salad with Balsamic Chicken

Sometimes we over-complicate nutrition and the best meals come from last minute easy to throw together recipes.

I do believe trying a new recipe every week or so is an amazing way to add variety and increase your knowledge of cooking and flavor, but sometimes just simple food is exactly what we need!

This meal is balanced with lean protein of chicken, high fiber complex carbs in the chickpeas, healthy fats with olive oils and olives, and multiple colorful vegetables.

You can make this dish ahead of time for meal prep or just the veggie mixture and make the chicken quickly later, perfect for a busy week!

Ingredients:
1 lb chicken
1/2 cup balsamic dressing of choice
1-2 cans chickpeas, drained
1 red bell pepper, diced
1 English cucumber, diced
2 tomatoes, diced
3 green onions, sliced (or 1/2 red onion)
1 cup green olives, halved
1 tbsp olive oil
1 tbsp red wine vinegar
Salt and pepper to taste
*Optional Tzatziki dressing overtop

Directions: Marinate chicken in balsamic dressing (hopefully for at least 1/2 a day). Combine chickpeas, bell peppers, cucumbers, tomatoes, green onions, and olives. Drizzle oil and vinegar over top and season with salt and pepper. Mix until well combined. Over medium heat cook chicken on both sides until cooked through 165F. Slice chicken over top a serving of the veggie mixture. Top with tzatziki dressing if using. Enjoy!
