I’m all about easy to prep salads right now and this one has a ton of flavor and color making it a perfect addition to your week!
This salad pack fiber with its raw vegetables and black beans while still giving a sweet and craveable kick with mangos.
I paired this dish with some pan seared salmon but it truly could go with anything you want!
I’d even say it would be an amazing dish to save for your next social summer event!
Makes about 2-3 servings
Ingredients:
2 mangos, pealed and diced
1 red bell pepper, diced
1 pint cherry tomatoes, halved
3 green onions, sliced
1 medium cucumber, diced
1 cup purple cabbage, chopped
1 can black beans, drained
2 tbsp cilantro, chopped
1 lime, juiced
2 Tbsp olive oil
1 Tbsp honey (or agave for vegan)
Salt and pepper
