Sheet Pan High Protein Egg Burritos

These flavorful egg burritos are exactly what you look forward to when you wake up in the morning!

I am always for meal prepping breakfast to save even just a few minutes in the morning can really save your day!

As you know I feel strongly that breakfast is an important start to your day and planning ahead really can increase the likelihood you’ll stay on track!

These egg burritos are super flavorful and I paired them with a cup of fruit for balance 🤍

Ingredients:
1 large sweet potato, pealed and shredded
10 large eggs
1 large tomato diced
3 green onions, sliced
1 can hatch green chilis
1 cup cottage cheese
1 cup cheddar shredded cheddar
Salt and pepper
8-10 burrito wraps

Directions: Preheat oven to 400F. On a greased sheet pan spread out the shredded sweet potato with a bit of salt and pepper and bake for about 8-10 minutes before it browns. Make egg mixture with eggs, tomatoes, green onion, green chili, cottage cheese, shredded cheddar, and salt and pepper. Once sweet potatoes are done add egg mixture over top and spread to the edge of pan. Bake for about 25-30 minutes until slightly brown. Cut into 8-10 rectangles. Place into burrito wraps and roll up. Can store in parchment paper wraps or foil (cannot microwave foil if you don’t already know 😅). Enjoy!
