
If you’re looking for a quick, minimal ingredient, nourishing meal this is it!
This is the type of meal I would use for someone who doesn’t like to cook with a lot of ingredients and includes a high protein source of lean ground turkey and 2 different colors of vegetables.
This recipe is low carbohydrates, but I like to pair this with roasted mini potatoes and sautéed greens for extra balance!
I also thought about adding some dried rosemary and thyme for more of Thanksgiving vibes but I didn’t in this video!
Ingredients:
Olive oil
1 lb Ground turkey
1/2 yellow onion, diced
4 garlic cloves, minced
1-2 red bell peppers, diced
Salt and pepper per preference
1 tsp smoked paprika
2 cups butternut squash, 1 inch cubes
1/2 cup chicken stock
1 cup Gruyère cheese, shredded
1 Tbsp fresh parsley, chopped
Direction: Preheat oven 400F. In an oven proof pan, heat olive oil on Medium. Add turkey, onion, garlic, and red bell pepper and cook until turkey is cooked through. Season with salt, pepper, and smoked paprika. Add in the butternut squash and chicken stock. Cover pan and cook for about 10-15 minutes until squash softens. Remove cover and sprinkle cheese over top. Place in oven and cook until cheese is melted about 5-10 minutes. Top with parsley and serve!
