Elevate Your Morning: Nutritious Black Bean Egg Wraps

Would you believe me if I said one of the biggest sources of sodium, calories, and saturated fat can come from breakfast??

But tbh I sometimes get surprised myself by how many people purchase fast food for breakfast. The main complaint I hear is there is not enough time in the morning to make breakfast at home (and believe me time is hard to come by)!

What you eat for breakfast really does set the trend for the rest of the day! Focus on a good source of protein and a high fiber carbohydrate source! Then bonus points if you can add a fruit or vegetable too!

Eating well at breakfast has been shown to reduce total volume of food later in the day, reduce cravings, balance blood sugar, reduced waist circumference and increase nutrient content/quality (such as fiber, vitamins, and minerals).

Disclaimer here: breakfast is not required if you’re not a breakfast eater. That being said in my 10 years of experience I strongly recommend a QUALITY breakfast daily!

These blackbean egg wraps are soo good and you can store in the fridge for up to 5 days! They contain about 26 grams protein, and 9 grams fiber 💪🏻

Ingredients:
6 whole grain tortillas
6 eggs, scrambled
15oz can black beans
1/2 red onion, diced
1 red bell pepper, diced
1/2 cup low fat shredded cheddar cheese
Olive oil
Salt and pepper

Directions: In a sauce pan over medium heat, add olive oil then sauté onions and red peppers together until cooked. Add in black beans and cook for about 5 minutes, remove from heat. In a medium pan cook the 6 eggs and add salt and pepper if using. Assemble the tortillas by adding blackbean mixture, eggs, and top with cheese. Roll into wraps. You can store in individual bags or tin foil for easy grab and go (PSA if using tin foil please remove before microwaving 😂).
