Healthier Pumpkin Muffins with Oat Flour Sweetened with Maple Syrup

This healthier version Pumpkin Muffins with chocolate chips are truly soo good you have to try it out! My entire family was obsessed (and so was I).

This recipe actually made quite a lot I even put some into a cake tin haha soo worth it!

Ingredients:
3 cups old-fashioned oats
1 tablespoon pumpkin pie spice
1 1/2 teaspoons baking soda
3/4 teaspoon fine sea salt
2 eggs
1 cup milk
1 cup pumpkin puree
1/2 cup maple syrup
3 tablespoons vegetable oil
1 teaspoon vanilla extract
optional: chocolate chips, sugar for sprinkling.

Directions: Preheat oven to 375F. In blender, blend the oats, pumpkin pie spice, baking soda, and salt and blend until combined. In a large bowl mix together eggs, milk, pumpkin purée, maple syrup, oil, and vanilla extract. Add dry mixture to wet mixture and combined. Add chocolate chips if using. Sprinkling sugar on top of using. Bake for about 15-18 minutes. Enjoy!
