Homemade Tortillas: Elevate Your Fajita Night

These are super easy and make a huge dish for a crowd and or meal prep. Very limited ingredients as well.

Not to mention have y’all attempted homemade tortillas yet? You won’t go back to store bought!

Sheet Pan Fajitas:
1 lb chicken breast, cut into 1 inch cubes
3 tri-color bell peppers, thinly sliced
1 red onion, cut in half and thinly sliced
1 can black beans, drained
Salt and pepper
1 tbsp smoked paprika
1 tsp ground cumin
Dash ground red pepper
Lime, halved and juiced over top

Directions: Heat oven to 400F. Combine and ingredients onto a sheet pan. Cook in oven for 10 minutes, mix, then bake for another 10 minutes, until chicken internal temperature is 165F. Enjoy with homemade tortillas!

Homemade Tortillas:
3 cups AP flour
1 tsp kosher salt
1 tsp baking powder
1/3rd cup olive oil
1 cup warm water

Directions: in a mixer with a dough arm, combine flour salt and baking powder and mix on low to combine. Add oil and warm water and mix until dough forms. In a floured surface, divide the dough into 16 balls. Roll the balls into flat tortillas and cook on the stove top until browned. Enjoy!
