Easy White Wine Cherry Tomato Cod Recipe

Cherry Tomato Cod

I made this recipe about a week ago and had to sub champagne because I didn’t have wine 🤣 but it worked out! And I got a few requests for this recipe so thought I would recreate it into a reel!

Ingredients:
1lb white fish (cod is great for this), seasoned with salt and pepper
olive oil
1 tsp crushed red pepper
4 garlic cloves, minced
2 pints cherry tomatoes, halved
1/2 cup dry white wine
1/2 cup basil cut in ribbon
1 lemon zested and juiced
salt and pepper

Directions: Heat deep skillet over med heat add olive oil to bottom. When hot, add crushed red pepper and garlic until fragrant (about 2 minutes). Add cherry tomatoes and cook for another 5-10 minutes until blistering. Add wine and reduce to a simmer. Simmer for 5-10 minutes or until sauce starts to thicken. Add lemon zest and juice, basil, salt and pepper. Cook another 1-2 minutes then remove tomato mixture into a bowl. In the same pan add olive oil over medium heat and add seasoned fish. Cook for about 5-10 minutes until browned and flip. Cook fish until internal temperature reaches 145F. Once cooked through add back tomato mixture and reduce heat to low for a few more minutes. Then serve with cous cous or whatever you would like!
