Whole Wheat Greek Yogurt Pancakes 🥞

Am I the only one who craves nostalgia on a Saturday morning?

Pancakes certainly bring me back to my childhood!

I wanted to add some additional nutrition to these pancakes by using Greek yogurt for extra protein and using whole wheat flour for extra fiber and filling ability.

What I also loved about these pancakes is they turned out moist due to the Greek yogurt!

There is maple syrup in there, so if you’d like to serve to babies feel free to swap to mashed banana and omit the chocolate chips #blw

Recipe makes about 12 pancakes

Ingredients:
2 cups whole wheat flour 


2 tsp baking powder


1/2 tsp baking soda


1/2 tsp salt


1/2 tsp ground cinnamon


1 cup plain nonfat Greek yogurt


1 and 1/4 cups milk
1/4 cup maple syrup (can swap for 1 mashed banana)
2 large eggs
1 tsp pure vanilla extract
3 Tbsp olive oil
*Optional chocolate chips!

Directions: in a large bowl, combine flour, baking powder, baking soda, salt and cinnamon. Whisk to combine and set aside. In a separate bowl mix together yogurt, milk, syrup, eggs, vanilla extract, and oil. Whisk to combine. Add wet ingredients to dry ingredients and combine until smooth. In a pan or griddle over medium heat, spray a thin layer of olive oil. Cook pancakes about 6 inch diameter, add chocolate chips to the top before flipping if using. Enjoy!
