Pumpkin Spiced Protein Oatmeal

High Protein Pumpkin Spice Oatmeal 🎃

Okay I saw this egg white oatmeal and I knew I wanted to try it but with some spice and yall this gave all the fall feels!

I like to cook oatmeal in bulk and eat off of it during the week — I usually add a dash or water before reheating.

I also love mixing 1/2 cup cooked oats with 1/2 cup nonfat Greek yogurt for even higher protein boost!

Always trying to add fruit and nuts for some fiber and healthy fats 💪🏻

Ingredients:
(Makes about 4-6 cups)
4 cup water (or milk of choice)
2 cup old-fashioned rolled oats (I used quick cooking oats my boys like the smaller texture!)
1 cup liquid egg whites
1/2 cup pumpkin puree
2 tbsp maple syrup
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1 teaspoon pure vanilla extract m
Pinch of salt
*pumpkin seeds and fruit to top

Instructions:
Boil 4 cups water in a pot on the stove. Add in oats, pumpkin puree, cinnamon, ginger, nutmeg, cloves, vanilla, and salt. Stir to combine. Reduce heat to a simmer for about 5 minutes or so oats begin to soften and thicken. Stir in liquid egg whites and maple syrup until a smooth consistency and cook another 5 minutes until set. Serve with pumpkin seeds and fruit (optional).
