
This recipe is great for meal prep, toddlers, breakfast, you name it! It’s super tasty, lower in sugar, and a good serving of grain and vegetables! I usually rotate between this and my blueberry muffin recipe weekly!
Ingredients:
2 small or 1 large zucchini, shredded
1 eggs, scrambled
1/2 cup apple sauce
3/4 cup maple syrup
1 tsp vanilla extract
2 tsp cinnamon
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 cups whole wheat flour
*optional extras such as chocolate chips or nuts
Directions: Preheat oven to 350F. Line a loaf pan with parchment paper or grease per preference. In a medium mixing bowl add zucchini, egg, apple sauce, maple syrup, and vanilla extract and whisk. In a large mixing bowl add the flour, cinnamon, baking powder, baking soda, and salt, whisk until combined. Add the wet ingredients to the dry ingredients and fold to combine. Pour into loaf pan and bake for 50-60 minutes until cooked through. Can store in the fridge for 5 days. Enjoy!
