Hummus is so versatile you’ll have to save this one for your new year or your next event!
I’ll be honest I rarely go out of my way to make hummus but I always love homemade sooo much better than store bought!
Edamame hummus has such an awesome flavor too I love it and adds a protein and fiber boost to sandwiches or as a snack with veggies or pita. You can even add some chili sauce over top to spice it up 🌶️
Also don’t forget you can place a dollop on top of halved hard boiled eggs similar to a deviled egg 💪🏻
If you’re planning on meal prepping or just simply needing a beautiful side dish for your next event this is the one for you!
1/4 cup provides on average 4 grams protein and over 3 grams fiber.
Ingredients:
1.5 cups edamame (I used frozen and boiled)
1/3 cup tahini
2 lemons, juiced
3 Tbsp olive oil
3 garlic cloves
1/2 tsp salt
1/2 cup fresh cilantro
4 Tbsp water (or more for consistency)
*Vegetable mixture I added on top included chopped cucumber, diced tomato, whole edamame, and feta (omit feta for vegan).
*pair with veggies or pita
Directions: if using frozen edamame, boil per package instructions. Once edamame cooked, cool down a bit then blend all ingredients in a blender. Adjust salt and lemon juice as needed. Enjoy!
