Herby Salmon Meatballs in Garlic Lemon Cream Sauce

Salmon Meatballs are so versatile, I made these in a quick garlic lemon sauce, but you could easily throw these into salads, pitas, or even make into patties for burgers!

I used my @sizzlefishfit salmon (about 3 pieces) and blended it in my food processor but you could try out canned salmon as well!

We paired the salmon meatballs with roasted potatoes and fresh arugula salad 🤌🏻

Ingredients:
1 lb salmon, ground
1/4 cup onion, chopped
4 garlic cloves, minced
1/4 cup breadcrumbs
1/4 cup fresh parsley, chopped
1 large egg, scrambled
1/2 lemon, squeezed
1/2 tsp dried dill
Salt and pepper

Garlic Lemon Cream Sauce:
Olive oil
1 Tbsp butter
5 garlic cloves, minced
1/2 cup chicken stock
1/2 cup white wine
3/4 cup heavy cream
1/2 lemon, juiced
Salt and pepper
1 Tbsp fresh parsley, chopped

Directions: Preheat oven to 400F. Make meatballs by mixing egg, ground salmon, onion, garlic, breadcrumbs, parsley, lemon, dill, and salt and pepper. Make into golf ball sized balls and place on a lined baking sheet. Bake in oven for about 15-20 minutes until cooked through 145F.

While the meatballs bake, on the stove over medium heat in a sauce pan, add olive oil, butter, and garlic and sauté for a few minutes until fragrant. Add chicken stock and white wine and simmer for about 5 minutes mixing together. Add in the cream sauce, lemon juice, salt and pepper and reduce down about 5-10 minutes. Add parsley and cook another minutes or so. Add in the cooked meatballs and spoon over sauce. Enjoy!
