Easy Sheet Pan Pancakes with Greek Yogurt and Oats

Healthy breakfast idea: No added sugar, Greek yogurt, oat flour sheet pan pancakes — do I need to say more??

These pancakes were amazing and soo versatile! We added blueberries and some syrup for sweetness but you could definitely add whatever you’re craving!

What I love about these is we are using oat flour instead of refined flour and there is no added sugar at all making it a guilt free breakfast idea! And bonus is my kids liked it too!

Ingredients:
1 cup rolled oats
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2 large eggs,
1 cup Greek yogurt
1 tsp vanilla extract.
*topping of choice such as berries

Direction: Preheat oven to 375F. In a blender mix together oats, baking powder, salt and cinnamon until smooth. In a bowl mix together eggs, Greek yogurt and vanilla extract. Add in dry ingredients to wet. Add blueberries and mix. Line a brownie pan and bake in the oven for 25 minutes until golden on the top. Enjoy!
