Halloween Charcuterie Breakfast Board

Is it spooky season yet? Or is it just me?

It’s Mid- September and my kids are asking non-stop to put up our Halloween decorations this weekend, so naturally I adjusted into the Halloween spirit!

I had to swing by the grocery store Friday anyway to grab a few items to make for dinner when creating a spooky breakfast board would be a perfect start to a Halloween decorating weekend! 

I did a quick Pinterest search for some ideas, but of course I had to make a healthy well-balanced twist! 

I made my Whole Wheat Greek Yogurt Pancakes from scratch (recipe here). 

No joke, I used my son’s spider -man play doh cutter to make the spider web shapes (I washed it first lol). 

I also used an Easter egg cutter for the skeleton head shape and then cut the bottom for a jaw. Added chocolate chips for the eyes which my kids immediately ate off when it was time to eat lol.

Though if you have enough time ahead of your Halloween breakfast board these are some cute Halloween shapes. 

Knowing my kids (and most kids) I knew if all I had on the board were sweets that would be all they ate so I focused on adding some balance to the aforementioned Whole wheat pancakes.

I added complex carbohydrates with all the cute Halloween fruit: banana ghosts with sprinkle eyes, orange pumpkins with a celery stem, and some black and red berries for contrast.

I added some healthy fats with avocado Frankenstein. I basically just cut the avocado in half, scooped it out, cut two “hair” for each from the skin, added eyeballs and pretzels for the screws.

I also made hard boiled eggs, halved, with eyeballs, which interestingly was my son’s favorite part of the themed board (though he doesn’t even eat eggs!). 

I topped off the board with some plastic spiders! I thought about adding some more spooky toys to the top but decided less is more sometimes! 

This was so fun and we did use it as a grazing board vs individual plates and the boys loved the change in routine which made it feel special for our Halloween day!
