
Needing more breakfast ideas?
I love adding fruit or vegetables to muffins, not just for our toddlers, but for adults too! These ABC muffins are rich in flavor and fiber and naturally sweetened with fruit with no added sugar!
My boys liked these with a little bit of vegan butter spread, and I would pair these with an egg or two for an adult breakfast!
Ingredients:
1 cup ripe banana, mashed (about 2)
2 apples, shredded
2 large carrots, shredded
3/4 cup milk of choice
1/4 cup melted butter
1 large egg, scrambled
1 tsp vanilla extract
1 cup whole wheat flour
1/2 cup rolled oats
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
Directions: Preheat oven to 375F. In a large bowl combine banana, apples, carrots, milk, butter, egg, vanilla extract and mix until well combined. In a separate bowl combine whole wheat flour, rolled oats, cinnamon, baking powder, baking soda, and salt and whisk to blend. Add dry ingredients to the wet ingredients and fold until combined. Divide into 12 muffins in a pre-greased muffin tin and bake for 20 minutes until cooked through. Enjoy!
